De acordo com dados da Associa\u00e7\u00e3o Brasileira da Ind\u00fastria de Caf\u00e9 (ABIC), entre novembro e outubro de 2010 houve um aumento de mais de 4% em rela\u00e7\u00e3o ao mesmo per\u00edodo do ano anterior. A melhoria da qualidade dos caf\u00e9s oferecidos \u00e0 popula\u00e7\u00e3o e a consolida\u00e7\u00e3o do mercado de caf\u00e9s gourmet s\u00e3o alguns dos fatores que influenciam esse aumento. A ABIC estima que este segmento apresente taxas de crescimento de 15% a 20% ao ano.<\/span><\/div>\n<div style=\"text-align: justify;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><br \/><\/span><\/div>\n<div style=\"text-align: justify;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Desde que o conceito de caf\u00e9s gourmet come\u00e7ou a ser difundido no pa\u00eds, h\u00e1 cerca de quinze anos, os especialistas em caf\u00e9 se esfor\u00e7am na tentativa de disseminar o h\u00e1bito de n\u00e3o ado\u00e7ar o caf\u00e9. Mas as opini\u00f5es sobre este assunto s\u00e3o divergentes e a maioria ainda torce o nariz quando \u00e9 convidada a provar a bebida pura, ou seja, sem a\u00e7\u00facar.<\/span><\/div>\n<div style=\"text-align: justify;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><br \/><\/span><\/div>\n<div style=\"text-align: justify;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Por isso, a Espresso resolveu desvendar este mist\u00e9rio de uma vez por todas. Conversando com o atual barista campe\u00e3o italiano, Francesco Sanapo, confirmamos este h\u00e1bito. Segundo ele, ali a torra \u00e9 mais escura, o que ressalta nitidamente o amargor do caf\u00e9. Ele conta que a maioria de seus clientes pede a\u00e7\u00facar ou ado\u00e7ante ao receber seu caf\u00e9. Mas, assim como o colega italiano, Fernando instiga seus clientes a experimentarem a bebida pura. \u201cExplico que o caf\u00e9 servido aqui \u00e9 especial, com uma torra m\u00e9dia que deixa transparecer melhor as caracter\u00edsticas sensoriais do caf\u00e9\u201d, completa.<\/span><\/div>\n<div style=\"text-align: justify;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><br \/><\/span><\/div>\n<div style=\"text-align: justify;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Assim, quem chega \u00e0 cafeteria do interior paulista \u00e9 convidado a tomar o primeiro gole de caf\u00e9 sem a\u00e7\u00facar. \u201cA maioria fica surpresa com o sabor e a do\u00e7ura do caf\u00e9.\u201d Fernando lembra o caso de um de seus clientes ass\u00edduos da cafeteria. \u201cToda manh\u00e3 ele chegava e me pedia um \u2018carioca\u2019.
